Does the sync require Apex or Salesforce admin work for every change?

No. Field maps live in Unito’s UI. Adding or changing a field map does not require Apex, triggers, or a deployment. Per-flow control over direction and timing.

Do internal Zendesk notes stay private when synced to Salesforce?

Yes. Flow rules decide what syncs. Internal notes can stay only in Zendesk or sync to private case fields the customer portal does not surface.
